The delicate dark green baby leaves of good old spinach are one of the most versatile ones of the lot. Tender and flavourful to be used raw and sturdy enough to be sauted, boiled or stir fried. Under ideal growing conditions, spinach baby leaves can be ready to harvest in a little more than two weeks. This powerful baby green is low in calories and a good source of iron, beta carotene, folate and vitamin C. Keep baby leaves of spinach in a sealed container to store for 3-4 days in the crisper drawer of the refrigerator.
